Ferment course
The first 2- 6 days of the fermenting (storm fermenting) is quite violent. There is formed a powerful foam (information press here) that disappears afterwards and the fermenting goes over into a calmer faze. But still with a high activity express in “plop“ about 40- 60 per minute.
The main amount alcohol is formed under the following 14 days and then the fermenting decreases down to one “plop” every other minute. The ferment time is for a light wine is 14- 20 days and for a strong wine 4- 6 weeks when the last alcohol from 12- 16% takes longer time. To get the best fermenting you should add all the sugar the first week when the ferment activity is high. The surface on the wine can not be to small, for example you can only fill 4/5 of a glass demijohn under the fermenting. If the demijohn is filled all the way up to the neck the carbonic will have to little space (only the neck bottles wide) to leave the wine on. The carbonic and the subjects it has with it to leave the fermenting and can in some cases stop totally specially on strong wines. Many wonder if it’s possible to ferment 10 litres wine on a 25- litre demijohn. Often is 10 litres wine faster done fermenting in a 25- litre demijohn then 20 litres does. In many wine books it says declared that demijohn should be filled up totally but this only accounts for when the wine is done fermenting. Under the fermenting the wine is protected by the carbonated pressure.
Temperature
The fermenting temperature in the air in the room should be 22- 24 Celsius. It is only practically current for some types on dry ferment. Floating ferment can be fermented down to 18 Celsius but the fermentation takes longer time, when high temperatures like 26- 28 increase the activity then more alcohol and flavour subjects follow with the carbonic through the fermentation lock and leaves the wine. It gives also wild ferment better relationship to form a less well tasting content. Be alert on the ferment vascular is standing on the floor, for an example in a laundry room, the rooms temperature be 23- 24 Celsius mean while the temperature on the floor can be 5- 10 lower.
